Product Questions

Where does Carnivello Foods source its meat?

We proudly source locally whenever possible, supporting Alberta farmers and ranchers. To ensure you experience only the world’s finest, we also bring in exceptional specialties—like authentic Wagyu beef from Japan and Australia—so your table is always graced with the very best.

Does Carnivello Foods mechanically tenderize, inject, or process its steaks?

Our steaks are never needled, injected, or mechanically tenderized. Every cut is prepared by hand with minimal processing, preserving the steak’s natural integrity, texture, and flavor for an uncompromised dining experience.

What are the different grades of beef and what do they mean?

Beef grading is the art of measuring quality. Government graders carefully evaluate each animal based on marbling—known as ‘frosting’ in Japan—along with age, muscle structure, and fat cover, all of which determine flavor and tenderness. In Canada, the highest grade is Prime, followed by AAA, AA, and A. At Carnivello Foods, we focus on only the finest grades, ensuring every cut delivers exceptional taste and texture.

Why is meat blood red in colour?

The rich red colour of steak comes not from blood, but from natural proteins within the meat. If your cut appears less vibrant at first, it is simply because the colour has not yet reached the surface. Once removed from its Cryovac packaging and allowed to breathe, the steak will quickly bloom to the deep, appetizing red you expect—proof of its freshness and quality.

What’s the difference between grass-fed and corn-fed beef?

Grass-fed and grain-fed describe the diet that shapes an animal’s flavour and quality. Animals raised solely on grass produce leaner meat with lower grades, while those nourished with corn, barley, wheat, or grains develop richer marbling and more robust flavour. Feed is only one element of an animal’s upbringing, often influenced by local harvests—Canadian cattle are typically finished on grains like wheat and barley, while in Japan, rice and sweet potato play a central role. At Carnivello Foods, we celebrate these distinctions, offering you meats that reflect both their heritage and the highest standards of taste.

Do you offer grass fed and finished meats products?

Absolutely, our Grass-Fed Beef is truly authentic—100% grass-fed and grass-finished, delivering unparalleled purity, flavor, and quality in every cut.

Are your meat products fresh or frozen?

Every order arrives perfectly frozen to preserve peak freshness. Our professionally vacuum-sealed, flash-frozen products maintain their exceptional quality for up to a year in your freezer - ensuring every cut is as fresh and flavorful as the day you purchased it.

Is your packaging recyclable and can the boxes be reused?

Every order is delivered in 100% recyclable packaging, thoughtfully designed to protect both your products and the planet. We encourage our customers to reuse our durable boxes, extending their life well beyond delivery.

What is the best method to defrost meat before cooking?

For the finest results, we recommend defrosting our products slowly in the refrigerator, preserving their peak flavor and texture. To keep your fridge spotless, simply place the vacuum-sealed package on a plate or tray. For your dining experience, we do not advise defrosting in water or the microwave, as these methods can compromise quality.

Can I prepare meat in a pan if I don’t have a grill?

Most of our cuts are best prepared in a large pan—ideally a cast-iron skillet—over high heat. With the right seasoning and precise temperature, you’ll achieve a beautiful, flavorful crust that enhances the natural quality of the meat.
