Snow Aged Wagyu is harvested in Japan’s northern mountains. The cold climate and topography in the area create a tremendous amount of snowfall annually. Creative farmers use power of the cold to their advantage by creating a natural frigid room filled with snow. These Yukimuro rooms maintain a consistent temperature of 1-2 C for over 90% of the year which is significantly more consistent than the average fridge which ranges from -2 to 6 degrees C. This consistently low temperature and high humidity environment brings out a deliciously sweet and mellow flavor found exclusively in Snow Aged wagyu.
Snow Aged Wagyu is considered to be a delicacy in Japan and is highly sought after by gourmet chefs and food enthusiasts. Because of its unique aging process, Snow-aged Wagyu is more expensive than other types of Wagyu, but many people believe that it is worth the extra cost for its exceptional flavor and texture.
