Hida beef cattle are raised on wide open pastures in the center of Japan’s mainland
The Cattle
Hida beef comes from the bloodline of a cattle named Yasufuku , a Japanese Black Cattle brough from Hyogo, the birthplace of Kobe Beef
Yasufuku is considered to be the ancestor of all modern day Hida cattle.
The Quality
Hida beef distinguishes itself with its intense, pearl white marbling found throughout every muscle
This unique pearl like marbling gives Hida beef a unique juiciness and flavor.
Hida beef is raised on the beautiful green grass of the Gifu prefecture. Located just south of Japan’s Northern Alps this area features vast plain areas, arable soil and gentle rivers which provide clean water for the cattle. Farmers from the Gifu region began raising cattle around 90 years ago and since then have continued to improve the breed to become recognized across Japan. Hida beef became recognized as a premium brand when Yasufukago was brought to the area producing the cattle that graze the pastures
today.
Farmers have said that Yasufukago had the perfect genetic attributes to breed cattle with high quality meat. Supported by decades of practice farmers have continued to produce high quality meat with intense marbling all from Yasufukago’s bloodline since 1981.
